Tri tip is a longer-triangular shaped piece of meat cut from the bottom of the sirloin. Depending on where you are from you may have also herd this cut referred to as a California cut, a Newport Steak or Santa Maria Steak. This steak has an excellent grain structure that makes it perfect for marinades or basting while cooking. With only two of these steaks for every beef harvested they are precious and sure to be enjoyed.
