Outer Skirt Steak



The outer skirt steak comes from outside the chest wall running along the bottom of the ribs. Often used for Fajitas, the grain structure allows for absorbing marinades while also being versatile over a wide variety of cooking methods. Another precious cut that only yields two steaks per beef harvested.
